Each curriculum includes 8 to 9 brief, flexible, interdisciplinary, and developmentally appropriate lessons designed to make nutrition education fun and relevant (see lesson highlights). Lessons can be taught by health teachers, classroom teachers, or school nurses.<\/p>\n<p>To make the most of the FFVP, teachers can also use the \u201c<a href=\"https:\/\/web.uri.edu\/wp-content\/uploads\/sites\/1241\/FFVP-Fun-Facts.pdf\">Fun Facts<\/a>\u201d and \u201cColor Chart\u201d messages that accompany each fruit or vegetable tasting. These short prompts help turn snack time into a meaningful learning opportunity.&nbsp;<\/p>\n<p>Classrooms can also extend their learning with activities that may be done school-wide, between select classrooms, or within a single classroom. Students may participate in the <b>Rainbow Challenge<\/b> (appropriate for grades K-5), a competition that encourages them to try more of the fruits and vegetables provided by the FFVP, or the <b>Planet Protectors<\/b> activity (appropriate for grades 3-5), which promotes healthy habits while reducing food waste and protecting the environment. See the Rainbow Challenge and Planet Protectors directions and poster tabs for more details.<\/p>\n<h2>How To Use This Curriculum<\/h2>\n<ul>\n<li>Grades K-2: Lessons take about 10-15 minutes. Activities are short, interactive, and hands-on to keep younger students engaged.<\/li>\n<li>Grades 3-5: Lessons take about 20-30 minutes and include more advanced content and critical thinking activities.<\/li>\n<\/ul>\n<p>Materials are flexible, so teachers may combine lessons or save parts for later. Most lessons include worksheets and activities that can be done individually, with partners, or in groups. Lessons can also be extended or explored more in-depth depending on the activities chosen to complement the core content. Curriculum connections to language arts, math, science, and social studies are built in.<\/p>\n<p>Across all grades, students also learn about food groups through USDA MyPlate, a guide for healthy eating. Free MyPlate posters are available at &nbsp;<a href=\"http:\/\/www.fns.usda.gov\/tn\/myplate-posters\">www.fns.usda.gov\/tn\/myplate-posters.<\/a><\/p>\n<h2>Lesson Highlights By Grade<\/h2>\n<div class=\"cl-tiles button-list halves\" style=\"background-color: transparent\">\n<div style=\"text-align: center\"><a class=\"cl-button   prominent\" href=\"https:\/\/web.uri.edu\/community-nutrition\/nutrition-education-and-resources\/curriculums\/grade-k\/\" title=\"The lessons teach children the importance of eating different color fruits and vegetables every day and how the colors help their bodies. Young children are given an incentive to try new fruits and vegetables and to monitor their own progress on the \u201cFruit and Veggie Taster\u2019s Club\u201d poster.\">Grade K-2<\/a><\/div>\n<div style=\"text-align: center\"><a class=\"cl-button   prominent\" href=\"https:\/\/web.uri.edu\/community-nutrition\/nutrition-education-and-resources\/curriculums\/grade-3-5\/\" title=\"Grade 1 includes an interactive \u201cEat Colors Be Healthy\u201d poster to teach students how different color fruits and vegetables help their bodies. A lesson and picture cards help teach the children where fruits and vegetables grow.\">Grade 3-5<\/a><\/div>\n<\/div>\n<div class=\"cl-tiles button-list thirds\" style=\"background-color: transparent\">\n<div style=\"text-align: center\"><a class=\"cl-button  \" href=\"https:\/\/web.uri.edu\/community-nutrition\/nutrition-education-and-resources\/curriculums\/jeopardy-game\/\" title=\"\">Jeopardy Game<\/a><\/div>\n<div style=\"text-align: center\"><a class=\"cl-button  \" href=\"https:\/\/web.uri.edu\/community-nutrition\/nutrition-education-and-resources\/curriculums\/rainbow-challenge\/\" title=\"\">Rainbow Challenge<\/a><\/div>\n<div style=\"text-align: center\"><a class=\"cl-button  \" href=\"https:\/\/web.uri.edu\/community-nutrition\/nutrition-education-and-resources\/curriculums\/planet-protectors-challenge\/\" title=\"\">Planet Protectors Challenge<\/a><\/div>\n<\/div>\n<p><strong>Grades K-2<\/strong><\/p>\n<ul>\n<li>Build excitement around eating and trying new fruits and vegetables, supported by fun sensory activities that engage sight, smell, touch, and taste.<\/li>\n<li>Learn how different colors of fruits and vegetables help the body stay strong, with the goal of \u201ceating the rainbow\u201d each day.<\/li>\n<li>Explore where fruits and vegetables come from and how they grow, using stories, posters, and gardening connections.<\/li>\n<li>Practice simple math, reading, and descriptive writing skills through colorful worksheets, riddles, and food journals.<\/li>\n<li>Participate in the Fruit and Veggie Taster\u2019s Club and use Tasting Passports to celebrate curiosity, bravery, and progress in trying new foods.<\/li>\n<\/ul>\n<p><strong>Grades 3-5<\/strong><\/p>\n<ul>\n<li>Strengthen decision-making and critical thinking skills by exploring how food is grown, prepared, and marketed.<\/li>\n<li>Use sensory analysis to describe foods, discover new flavors, and understand how preparation methods can change taste and nutrition.<\/li>\n<li>Examine how the media and advertising influence food choices, then create posters and persuasive messages to encourage peers to eat more fruits and vegetables.<\/li>\n<li>Engage in hands-on math and science connections, such as serving size estimation, fractions, and plant part identification.<\/li>\n<li>Explore cultural inclusivity by recognizing and discussing fruits and vegetables from different cuisines and traditions.<\/li>\n<li>Extend learning into the cafeteria with Planet Protectors and other school-wide initiatives that promote healthy eating and reduce food waste.<\/li>\n<\/ul>\n<p>The Fruit and Vegetable Jeopardy Games can be used for an assessment after all the lessons have been taught. For over a decade, students have been empowered to become wellness advocates in their schools by having the opportunity to see their community reflected in school meals and to recognize their meaningful voice in shaping their environment. The STC program supports the adoption of healthy eating behaviors and provides students with tools to positively influence the nutrition environment around them. The STC program goals are:<\/p>\n<div class=\"cl-tiles halves\">\n<div>\n<!-- iframe plugin v.6.0 wordpress.org\/plugins\/iframe\/ -->\n<iframe loading=\"lazy\" src=\"https:\/\/docs.google.com\/presentation\/d\/1yh6Rc7PynVIllLHJfE5ag35MS-nubuPCr4IQqfag9SA\/embed?start=true&#038;loop=true&#038;delayms=3000&#038;rm=minimal\" frameborder=\"0\" width=\"550\" height=\"400\" allowfullscreen=\"true\" mozallowfullscreen=\"true\" webkitallowfullscreen=\"true\" scrolling=\"yes\" class=\"iframe-class\"><\/iframe>\n<\/div>\n<div>\n<ul>\n<li style=\"list-style-type: none\">\n<ul>\n<li style=\"text-align: left\">Educating students on the benefits of healthy eating, with a focus on fruits and vegetables<\/li>\n<li style=\"text-align: left\">Identifying barriers to better nutrition and developing solutions that can be applied at school and at home<\/li>\n<li style=\"text-align: left\">Learning how policies, systems and their home and school environment affect behaviors<\/li>\n<li>Introducing students to their district\u2019s Wellness Committee and encouraging connection and advocacy\n<ul>\n<li style=\"text-align: left\">Inspiring long-term engagement in school wellness policy and practices<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<p>As part of the Team Nutrition grant, the Rhode Island Department of Education (RIDE), URI SNAP-Ed, Farm Fresh Rhode Island, Johnson &amp; Wales University, and Rhode Island Healthy Schools Coalition set a goal to expand the successful STC program so that all students in Rhode Island can participate.<\/p>\n<h2>How to use this Curriculum<\/h2>\n<p><a href=\"https:\/\/web.uri.edu\/community-nutrition\/nutrition-education-and-resources\/curriculums\/students-take-charge-toolkit\/\" target=\"_blank\">The Students Take Charge (STC) Toolkit<\/a> provides best practices, timelines, handouts, and curriculum for the nutrition education program. To ease the burden of delivering this great program to Rhode Island students, the toolkit includes these resources for the following lesson types:<\/p>\n<div class=\"cl-tiles button-list thirds\" style=\"background-color: transparent\">\n<div style=\"text-align: center\"><a class=\"cl-button   prominent\" href=\"https:\/\/web.uri.edu\/community-nutrition\/nutrition-education-and-resources\/curriculums\/stc-curriculum-elementary-scripted\/\" title=\"\">Scripted Elementary Curriculum<\/a><\/p>\n<ul>\n<li style=\"text-align: left\">8-week, fully scripted lessons<\/li>\n<li style=\"text-align: left\">Each lesson equates to a 40-minute session&nbsp;<\/li>\n<\/ul>\n<\/div>\n<div style=\"text-align: left\"><a class=\"cl-button   prominent\" href=\"https:\/\/web.uri.edu\/community-nutrition\/students-take-charge-elementary-video-curriculum\/\" title=\"\">Video Elementary Curriculum<\/a><\/p>\n<ul>\n<li style=\"text-align: left\">12 video lessons for elementary-aged students<\/li>\n<li>Each video is approximately 5 minutes<\/li>\n<\/ul>\n<\/div>\n<div style=\"text-align: center\"><a class=\"cl-button   prominent\" href=\"https:\/\/web.uri.edu\/community-nutrition\/students-take-charge-secondary-school-video-curriculum\/\" title=\"\">Video Secondary School Curriculum<\/a><\/p>\n<ul>\n<li style=\"text-align: left\">12 video lessons for middle and high school-aged students<\/li>\n<li style=\"text-align: left\">Each video is approximately 12 minutes<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<p>The goals are the same for any STC lesson option; the user decides which works best for their group of students.
