Add the onions and cook, stirring often, for about 3 minutes.<\/li>\n<li>Add garlic and cook for 30 seconds.<\/li>\n<li>Stir in the refried beans and bring to a slow boil, then reduce heat to low. Stir in the salt and oregano, and simmer for 10 minutes, uncovered. Set aside to cool.<\/li>\n<li>Once the beans have cooled, fold in the shredded mozzarella cheese.<\/li>\n<\/ol>\n<p><strong>Pupusa Dough<\/strong><\/p>\n<ol>\n<li>In a large bowl, combine the masa harina and salt, then add the water. Use your hands to mix and knead the dough until combined and clay- like; it should be elastic, but not sticky.<\/li>\n<li>Take about \u2153 cup of dough and roll into a ball. Flatten the ball into a disk-shape, about \u00bd-inch thick, 5-inches wide.<\/li>\n<li>Place about 1\u00bd tablespoons of the bean and cheese mixture in the center of the dough round. Fold the sides of the dough around the mixture, making a \u201cpouch\u201d, and pinch the opening together to enclose the mixture. It is helpful to have a small bowl of water nearby to keep your fingers wet as the dough is being shaped.<\/li>\n<li>Carefully pat the dough ball flat between your hands into another disk about 4 or 5 inches wide. If the filling tears, patch it with any extra dough. Using your fingers, coat each pupusa with a small amount of the remaining 2 tablespoons of oil. Adicione a cebola e cozinhe, mexendo sempre, por cerca de 3 minutos.<\/li>\n<li>Adicione o alho e cozinhe por 30 segundos.<\/li>\n<li>Junte o feij\u00e3o frito e deixe ferver lentamente, depois reduza o fogo. Adicione o sal e o or\u00e9gano e cozinhe por 10 minutos, descoberto. Reserve e deixe esfriar.<\/li>\n<li>Assim que o feij\u00e3o esfriar, acrescente o queijo mussarela ralado.<\/li>\n<\/ol>\n<p><strong>Massa de Pupusa<\/strong><\/p>\n<ol>\n<li>Em uma tigela grande, misture a \u201cmasa harina\u201d e o sal e adicione a \u00e1gua. Use as m\u00e3os para misturar e sovar a massa at\u00e9 ficar homog\u00eanea e parecida com argila; ela deve estar el\u00e1stica, mas n\u00e3o pegajosa.<\/li>\n<li>Pegue cerca de \u2153 copo de massa e fa\u00e7a uma bola. Achate a bola em forma de disco, com cerca de \u00bd polegada de espessura e 5 polegadas de largura.<\/li>\n<li>Coloque cerca de 1\u00bd colheres de sopa do recheio no centro da massa redonda e dobre as laterais da massa em volta da mistura, formando uma trouxinha.
