Blend until smooth.<\/li>\n<li>In a medium-sized soup pot over medium heat, add oil, red onion, and garlic. Cook until softened, about 3 minutes.<\/li>\n<li>Add pepper mixture, remaining 2 cups water, chicken stock and chicken to the soup pot with onions and garlic.
