Ingredients

  • 3 cups diced red potatoes (about 1 pound)
  • 2 cucumbers, diced
  • ½ medium red onion, diced
  • ⅓ cup nonfat plain yogurt
  • ⅓ cup light mayonnaise
  • ½ teaspoon celery salt
  • ¾ teaspoon dried dill weed (or 1 tablespoon fresh dill)

Directions

  1. Boil a pot of water, add diced potatoes, and cook for 20 minutes. Drain potatoes and refrigerate until cool.
  2. Place yogurt, mayonnaise, celery salt, and dill weed in a large bowl. Mix well.
  3. Add cucumbers, red onion, and cooked potatoes to yogurt and mayonnaise mixture. Toss well and serve chilled.
