Ingredients

  • 3 cups finely diced carrots
  • 1 cup dry brown lentils
  • 2 cloves garlic, minced
  • ¼ cup onion, diced
  • ½ teaspoon salt
  • 1 bay leaf
  • 3 cups water
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • Black pepper, to taste

Directions

  1. Combine carrots, lentils, garlic, onion, salt, and bay leaf in a saucepan with 3 cups water.
  2. Bring to a boil, reduce heat, and simmer 25 minutes.
  3. Drain. Discard bay leaf.
  4. Stir in butter, lemon juice, and black pepper.
  5. Serve hot as a side dish, or chill and serve as a salad.
