Dr. Feng, an assistant professor of Public Health in URI’s College of Health Sciences, recently secured a $1 million grant to support her research funded by the U.S. Department of Agriculture’s National Institute of Food and Agriculture.
According to Dr. Feng, “Dollar stores play an increasingly important role in food retail, especially for low-income Americans and those who live in areas with limited food access. In this three-year project, we will gather qualitative data and use detailed consumer purchase records to examine the intersection of food purchase behavior and consumer strategies used to cope with food inflation. Based on the findings, we will develop a toolkit with educational resources.”
