Ingredients

  • 4 cups water
  • 3 cloves garlic, peeled
  • 4 plum tomatoes
  • ½ large white onion, roughly chopped or ½ cup chopped frozen onion
  • 1 medium green bell pepper, roughly chopped
  • ½ cup fresh cilantro
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 6 basil leaves, chopped

Directions

  1. Add water to a medium-size saucepan and bring to a boil. Add tomatoes and boil until tender and skin begins to separate from the flesh. Remove from heat and discard water.
  2. Once cool enough to handle, remove skins from tomatoes and discard. Add tomatoes to a blender with the remaining ingredients. Blend until smooth.
  3. Pour the salsa mixture back into the pot and bring to a boil. Reduce heat and simmer. until sauce thickens slightly, about 10-15 minutes.
  4. Remove from heat and enjoy salsa hot or cold.
