Ingredients

  • 2 tablespoons canola oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 3 tablespoons flour
  • ⅛ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon thyme
  • 2½ cups low-fat milk
  • 1 (16 ounce) bag chopped frozen broccoli, defrosted

Directions

  1. Heat oil in soup pot over medium heat. Add onion and garlic and cook for 3-4 minutes until tender.
  2. Add flour, stirring until mixture begins to thicken. Stir in pepper, salt and thyme.
  3. Slowly add the milk, stirring until thickened.
  4. Add broccoli and simmer the soup for 10 minutes or until broccoli is tender.
