Ingredients

  • 1 tablespoon olive oil
  • 2 cups Swiss chard stems, diced
  • 1 tablespoon minced garlic
  • 1 (14.5 ounce) can potatoes, drained, rinsed, and diced (or 3 medium potatoes, cooked and diced)*
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 green onions, chopped

* To cook fresh potatoes, dice first and then boil for about 15-20 minutes or until tender.

Directions

  1. Heat a pan over medium heat. Add oil.
  2. Add chard stems and cook 1 minute, then add garlic.
  3. Add potatoes, salt, and pepper, and cook until potatoes turn golden brown (about 5 minutes).
  4. Add green onions, stir, and serve hot.
