Ingredients

  • 1 cup uncooked brown rice
  • 16 ounce bag frozen mixed vegetables
  • 2 tablespoons canola oil
  • 1 cup chopped yellow onion
  • 4 cloves fresh garlic, minced
  • 4 eggs, beaten
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil (optional)

Directions

  1. Cook brown rice according to the package.
  2. Microwave frozen vegetables according to the package.
  3. Heat canola oil in a nonstick 12 inch pan over medium-high heat. Add onions and garlic and cook for 5 minutes.
  4. Add cooked rice to pan and cook for 5 minutes or until rice is crisp.
  5. Move onions, garlic and rice to one side of pan. Add eggs to the empty side of the pan and scramble until cooked.
  6. Add cooked vegetables, soy sauce and sesame oil (if using) to pan. Cook for2 minutes and serve hot.
