Ingredients

  • 2 tablespoons vegetable oil
  • 2 cups diced onion
  • 2 cloves garlic, minced
  • 2 cups water
  • 2 cups instant brown rice, uncooked
  • ½ teaspoon salt
  • 1 cup shredded carrots
  • ½ cup raisins
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 2 tablespoons sliced almonds or pistachios (optional)
  • ¼ teaspoon black pepper
  • 1 teaspoon cumin
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cardamom (optional)

Directions

  1. Heat 1 tablespoon vegetable oil in a medium saute pan. Add onions and cook for 3 minutes or until tender. Add garlic and cook for 1 minute.
  2. Add rice, water, and salt to onions and garlic. Bring to a boil, then reduce heat to low and cover. Simmer for about 10 minutes or until water has been absorbed.
  3. While rice is cooking, heat the remaining tablespoon of vegetable oil in a separate saute pan. Add carrots, raisins, chickpeas, nuts, and remaining spices, and saute for about 5 minutes, stirring often.
  4. Dish rice onto a serving platter and spread the carrot, raisin, chickpea, and nut mixture over the top. Serve and enjoy!
