Ingredients

  • 1½ cups uncooked couscous
  • 1 teaspoon minced fresh garlic
  • 2 tablespoons chopped parsley
  • ½ cup chopped red onion
  • 2 cups chopped fresh vegetables (tomatoes, cucumber, bell peppers)
  • 1 tablespoon crumbled feta cheese

Dressing

  • 2 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 1½ teaspoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Directions

  1. Cook couscous according to package and set aside.
  2. In a small bowl, mix dressing ingredients together.
  3. In a large bowl, toss garlic, parsley, onion, vegetables, couscous, cheese and dressing together.
  4. Refrigerate for 2-3 hours before serving.
