Immune Boosting Vegetable Soup Recipe

Immune Boosting Vegetable Soup Recipe

Something that I have been trying to do during this social distancing is limiting my time at the grocery store. This means coming up with recipes that can last or even be frozen if made in bulk. While doing this might seem simple, a lot of resources aren’t available at the grocery store. It is almost impossible to find chicken at these times. I found that making soup has been a great way to make the most of the resources provided. Not only is soup a nice cozy meal to eat while snuggled up watching your favorite Netflix show, but I added some immune-boosting ingredients to keep us healthy during this time!

Immune-Boosting Vegetable Soup

Recipe:
2 cartons low-sodium vegetable broth
1 large yellow onion
3 stalks celery
3 large carrots
3 Tbsp minced garlic (or 3 cloves)
3 Tbsp turmeric

Garlic and turmeric are the immune-boosting ingredients in this recipe. Garlic is known for fighting infections because of its high concentration of sulfur-containing compounds. Turmeric has anti-inflammatory properties which has even been used for patients with arthritis.
