Biography
Alex Larcom is a registered dietitian and PhD Candidate in the department of Nutrition. Before coming to URI, she has worked in clinical dietetics and the health and fitness industry. Alex is currently the Graduate Research Assistant for the Breakfast Club Study, examining meal processing level and energy intake, appetite, and satiety. She is also a part time CrossFit coach and enjoys running, hiking, skiing, and watching college football.
Research
Alex’s dissertation research focuses on ultra-processed food consumption, diet quality, and eating behaviors in young adults and college students, and as well as how young adults understand and conceptualize ultra-processed food.
