Biography

Jackie is a third-year PhD student from New Hampshire. She graduated in 2018 from URI with a BS in Nutrition and completed her MS in Nutrition from URI in 2021. Jackie is part of the Amin Lab and is a full-time Graduate TA for two undergraduate nutrition courses. She has worked as part of the Amin lab for 4 years leading and assisting with research in the community nutrition education setting. Jackie enjoys visiting local restaurants, spending time with her family and friends, traveling, and hiking in New Hampshire’s White Mountains.

Research

Jackie is primarily interested in community nutrition, outreach, and working with underserved populations. Her current research focuses around a USDA Children, Youth, and Families at Risk (CYFAR) grant. She is working in the Amin Lab to study the effects of a combined STEAM- and nutrition-education summer program on underserved, racially and ethnically diverse elementary-aged youth in Rhode Island using CBPR methods.
