Sustainable Food Systems
Confronting Grand Challenges in Food Systems
(3 crs.) Students will use systems-thinking to explore the Grand Challenge of how food journeys from production to consumption, gaining a new perspective on how food systems work and why they matter. (Lec. 3) (A2) (GC)

(3 crs.) Geography of human relationships to earth's systems with an emphasis on individual impacts and collective efforts to achieve environmental sustainability. (Lec. 3)

Food Justice
(3 crs.) Examines the production, distribution and consumption of food through a social justice lens focused on identifying intersecting inequities and activating strategies to dismantle their root causes. (Lec. 3) Pre: Sophomore standing. (A2) (C3)
Sustainable Agriculture and Food Systems Internship
(1-12 crs.) This 1-12 credit course offers students the opportunity to gain “real-world” exposure and supervised experience related to the SAFS major, specific field of study or career interests. Students will integrate theories learned in the classroom with experiential activities acquired through direct involvement in on/off-campus internship opportunities. Students will develop professional skills in preparation for future employment or graduate school studies. SAFS students can count up to 3 internship credits toward Capstone credits required for the major. (Practicum) Pre: Students must have completed one semester at URI with a GPA above 2.0 and be a current or prospective SAFS major or minor; cannot be counted for concentration credit in SAF; permission of instructor. Can be repeated up to 4 times for a maximum of 12 credits. S/U Only.
Urban Agriculture: Policy, Planning, and Design
(3 crs.) Explores urban agriculture through lectures, readings, field trips, and hands-on learning. Culminates in an assessment of a local food system and a proposal for increasing its resilience, sustainability, and equity. (Lec. 3) Pre: junior standing. Not for graduate credit. (D1) (GC)

(3 crs.) Cross-listed as (AVS), NFS, SAF 404. Scientific analysis of animal and human health and nutrition in various food systems. Interdisciplinary discussion on food systems and sustainability. (Lec. 3) Pre: Senior in good standing or permission of instructor. Not for graduate credit. (D1) (B4)
Teaching Practicum in Sustainable Agric. and Food Systems
(1-3 crs.) Teaching experience for undergraduates through planning and assisting in Sustainable Agriculture and Food Systems courses and laboratories. Not for concentration credit in SAF. (Practicum/Online) Pre: Sophomore standing; for majors only; not for major credit in SAF; B or higher in course; permission of instructor. May be repeated 4 times for a maximum of 12 credits. S/U only. Not for graduate credit.
Urban Agriculture: Policy, Planning, and Design

Political Ecology for Environmental & Life Sciences
(3 crs.) Cross-listed as (MAF), SAF, BES 547. This seminar gives graduate students in environmental and life sciences an interdisciplinary foundation in social science dimensions of their discipline(s) and topic(s) through introduction to the field of political ecology. (Seminar) Pre: Graduate standing. Seniors may join the course with permission of the instructor.
