Lawyer by day, vegan chef by night, Peter Carvelli is making a name for himself, developing a devoted following, hosting popular pop-up events, offering private catering, and doing short-term residencies featuring his elevated vegan cuisine.

As the pandemic restrictions shifted in Rhode Island, “Chef Pete” decided that time was right to pursue the dream of owning his brick-and-mortar restaurant. After an attempt to purchase a building in one of RI’s East Bay communities fell through, he narrowed his search to focus on leasing opportunities for a turnkey location.

In February 2021, Chef Pete found a home for his restaurant, Foglia, in Bristol. Formerly the location of a nationally known fine dining restaurant, the space’s history, energy, and soul were perfect for his restaurant’s vision and elevated menu. After an extensive renovation, the downtown Bristol restaurant officially opened to guests.

Today, Foglia’s chef-driven, full-service restaurant offers a plant-based, casual-fine dining menu with a thoughtful bar experience featuring a curated wine collection, craft beers, and exceptional cocktails with and without alcohol. Already creating a buzz, Foglia has gathered accolades and coverage regionally and nationally, having won a Vegetarian Times “Best New Restaurant 2022” award after only three months of operation.

With the assistance of Paul Harden and Maggie Longo, Chef Pete had the guidance and support he needed to bring Foglia to the public. Chef Pete said, “I received excellent service and advice from Maggie and Paul. Couldn’t have done it without them!”
